When you think of classic summer foods, creamsicles are near the top of the list! These creamy, citrusy popsicles are a great way to cool off on a hot summer day. With healthier ingredients and tahini instead of cream, you can help yourself to seconds!
In a small sauce pan combine corn starch and coconut milk. Simmer over low heat until corn starch is dissolved, stirring consistently to ensure milk does not burn. Remove from heat.
Pour coconut milk mixture into a medium bowl. Add orange juice, tahini, maple syrup, and vanilla extract. Whisk until fully incorporated.
Place mixture into a measuring up with spout. Pour into popsicles molds; add sticks. Freeze overnight.
When frozen solid, remove pops from molds by placing in a warm water bath for 5-10 seconds.

Hi Sheila! We haven’t tried the recipe in an ice cream maker but you could definitely try freezing it in another shape and scooping it out!
