Ingredients
1 lb ground chicken, turkey, pork, beef, or Impossible/Beyond beef (alternative vegan option below)
1 Tbsp neutral oil
4 cloves garlic, finely minced
1 Tbsp freshly grated ginger
2 Tbsp soy sauce
½ tsp white pepper
1 tsp sesame oil
1½ cups finely chopped mushrooms
1 cup crumbled tofu
2 Tbsp soy sauce
2 Tbsp hoisin sauce
1 ½ Tbsp rice vinegar
1-2 Tbsp chili crisp (adjust to taste)
1 Tbsp brown sugar or maple syrup
1 tsp Sichuan peppercorns
1 ½ cups chicken or vegetable broth (use ½ cup as needed)
12-16 ounces fresh wheat noodles, udon, or spaghetti
3 scallions, thinly sliced
1 cup bok choy (optional)
toasted sesame seeds (optional)

Directions
In a bowl, combine soy sauce, white pepper, garlic, ginger, ground meat, and mix until combined. Let set 10-15 minutes.
Bring a large pot of salted water to a boil and cook noodles according to package directions. (If using, add bok choy to last 90 seconds of boiling for a quick blanch). Drain and set aside.
In a bowl, whisk together tahini, soy sauce, hoisin, rice vinegar, chili crisp, maple syrup, and Sichuan peppercorns. Set sauce aside.
Heat a large skillet over medium-high heat. Add the oil, then the ground meat. Break it up with a wooden spoon and cook until browned and cooked through, about 5–7 minutes.
Pour the sauce into the skillet with the meat. Add 1 cup broth and stir. Simmer for 3–5 minutes until slightly thickened and glossy. If needed, add a splash more broth to loosen to your desired consistency.
Divide noodles among bowls. Spoon the saucy meat mixture over top, making sure to ladle some of the savory broth into each bowl.
Top with scallions, sesame seeds, and bok choy if using. Serve immediately.
