Warm Grain Salad with Creamy Tahini Dressing

Ingredients
1 package Kaizen rice
1 pint cherry tomatoes
2 tbsp extra virgin olive oil
sea salt & pepper
1/4 cup fresh dill; chopped
1/4 cup fresh parsley, chopped
1/4 cup pistachios; chopped
1/4 cup pomegranate seeds
1 Tbsp lemon juice
1 Tbsp maple syrup
3 Tbsp water; plus more as needed
2 Tbsp extra virgin olive oil
1 Tbsp fresh dill, chopped
Sea salt & pepper; to taste

Directions
Create the dressing. Whisk together tahini, lemon juice, maple syrup, water, extra virgin olive oil, and fresh dill. May be thick at first, add additional water in 1 Tbsp intervals until desired consistency is reached. Season to taste with sea salt and pepper.
Prepare Kaizen rice according to package directions. Strain, rinse, and set aside.
Prepare blistered tomatoes. Warm pan over medium/high heat. Add 2 Tbsp extra virgin olive oil. Add whole cherry tomatoes. Toss gently to coat and allow to cook until blistered; stirring occasionally. Season with sea salt & pepper.
Assemble the salad: Add rice to serving bowl. Pour half of the dressing over top and mix. Add tomatoes, fresh herbs, chopped pistachios & pomegranate. Toss & serve. Use remainder of dressing for individual servings & enjoy!
Recipe Note
If you're not able to get Kaizen rice you can substitute to a grain of your choice like farro, quinoa, or orzo.
