Summer Corn Salad

Ingredients
1 (14 oz) can chickpeas, rinsed and drained
½ hothouse cucumber (or 2–3 Persian cucumbers), diced
1 pint cherry tomatoes, halved
3 ears corn, kernels sliced off the cob (grilled or boiled)
1 avocado, diced
1 cup crumbled feta cheese
2 green onions, thinly sliced on a bias
optional: freshly torn basil
⅓ cup olive oil
½ shallot, finely minced
3 cloves garlic, minced
Zest and juice of 1 lemon
2 Tbsp red wine vinegar
1 Tbsp honey
1 tsp Dijon mustard
½ tsp red pepper flakes
Kosher salt, to taste
Freshly ground black pepper, to taste
Lemon Tahini Vinaigrette
Directions
Grill or boil the ears of corn, then slice off the kernels once cool enough to handle.
To grill: Preheat your grill to medium-high heat. Lightly brush the husked corn with olive oil and grill for 8–10 minutes, turning occasionally, until slightly charred and tender. Let cool slightly, then slice the kernels off the cob.To boil: Bring a large pot of salted water to a boil. Add the husked corn and cook for 4–5 minutes, until bright yellow and tender. Drain and let cool slightly before slicing the kernels off the cob.
In a large bowl, combine chickpeas, cucumber, cherry tomatoes, and corn.
In a small bowl or jar, whisk together tahini, olive oil, shallot, garlic, lemon zest and juice, vinegar, honey, mustard, red pepper flakes, salt, and pepper until smooth and creamy.
Pour the vinaigrette over the salad base and toss to coat.
Just before serving, gently fold in avocado and feta. Top with green onions.
Recipe Note
Make Ahead: You can prep the salad and vinaigrette ahead of time and refrigerate separately or together. Add avocado, feta, and green onion right before serving for best texture and freshness.
Salad (without avocado and feta) keeps well in the fridge for up to 2 days.
You can use 1½ cups of frozen corn (thawed and lightly sautéed) in place of fresh corn.
Make it vegan: Skip the feta or swap in a plant-based feta alternative. Use maple syrup instead of honey in the vinaigrette.
