Easy Chilled Sesame Noodles

Ingredients
12–14 oz noodles (soba, ramen, or spaghetti)
1 tsp sesame oil
salt, for pasta water
½ cup vegetable stock
1 Tbsp soy sauce
1½ tsp hot sauce (like sriracha, chili crisp, or sambal oelek, adjust to taste)
4 cloves of garlic, minced
1 tsp sesame oil
Juice of 1 large lemon (about 2 Tbsp)
½ tsp kosher salt
⅓ cup chopped cilantro
4 thinly sliced scallions
Optional: sesame seeds, chili oil, crushed peanuts

Directions
Bring a large pot of salted water to a boil. Add the noodles and cook according to package instructions until al dente. Drain and rinse with cold water. Toss with a splash of sesame oil to prevent sticking. Set aside.
In a large mixing bowl, whisk together the tahini, broth, soy sauce, hot sauce, garlic, sesame oil, lemon juice, and salt. Stir until smooth and creamy. Add more broth or water, 1 tablespoon at a time, if the sauce feels too thick.
Stir in chopped cilantro and half the sliced scallions. Taste and adjust the seasoning or heat level if needed.
Add the cooked noodles directly to the bowl with the sauce. Toss well until the noodles are fully coated and everything is combined.
Divide into bowls and top with remaining scallions and cilantro. Add optional toppings like sesame seeds, chili oil, or crushed peanuts for extra flavor and texture. Serve immediately.
Recipe Note
Dietary Preferences: Dairy-Free, Nut-Free, Soy-Free, Vegan. It can also be made Gluten-Free if pasta is substituted for gluten-free pasta.
