Spiced Carrot Tahini Soup with Za’atar Challah and Chickpea Croutons and Lemon Garlic Tahini Drizzle is loaded with flavor and has the perfect balance of heat and dimension. We love the extra layer the tahini sauce brings to the soup and the crunch of the Mediterranean flavored challah and chickpea croutons.

This recipe is slightly adapted from Sarah Barr Engel, alumna of Challah for Hunger at Cornell, whose recipe is based on Deborah Madison’s Carrot Soup recipe from In My Kitchen.

**Omit challah and chickpea croutons if you plan to make this for Passover.
