Shaved Brussels Sprout Salad with Greek Goddess Tahini Dressing

Ingredients
1 lb Brussels sprouts, ends trimmed and thinly shaved (use a mandoline or food processor)
½ cup pomegranate arils
⅓ cup roasted pistachios, roughly chopped
½ cup finely grated pecorino cheese

5 Tbsp olive oil
3 Tbsp vinegar (white wine or apple cider)
salt & pepper to taste
Dressing
Directions
Add the After Noon Greek Goddess stickpack, olive oil, vinegar, and tahini to a jar or container with a lid. Shake vigorously until the dressing is smooth and fully combined. Season with salt and pepper to taste.
Add the shaved Brussels sprouts to a large bowl. Drizzle in about half of the dressing and toss well to evenly coat. Let sit for 5–10 minutes to slightly soften.
Add the pomegranate arils, chopped pistachios, and grated pecorino. Drizzle over the remaining dressing and toss again until everything is well coated.
Transfer to a serving bowl or platter. Top with extra pomegranate, pistachios, and a sprinkle of pecorino.
Recipe Note
Store the dressed salad in an airtight container in the fridge for up to 2 days. The Brussels sprouts hold up well and won’t wilt like leafy greens.
If prepping ahead for maximum crunch, store the dressing separately and toss the salad right before serving.
Keep extra pistachios and pomegranate arils separate until serving to maintain their texture.
