Miso Tahini Dressing

Ingredients
2 Tbsp red miso paste
2 inch knob of peeled fresh ginger
1 juiced lemon
1 tsp reduced-sodium soy sauce
¼ cup filtered water
Directions
Add the tahini, red miso paste, peeled ginger, lemon juice, soy sauce, and water to a high-speed blender or food processor.
Blend until completely smooth and creamy, scraping down the sides as needed. Taste and adjust consistency with a splash of water, if desired.
Store in an airtight container in the fridge for up to a week. Shake or stir before using.
