Mediterranean Turkey Burger Bowls

Ingredients
1 pound ground turkey
¼ cup fresh parsley, roughly chopped
1/3 cup sun-dried tomatoes, chopped
¼ cup feta cheese

¼ cup Soom Foods Premium or Organic Tahini
2 Tbsp onion, finely minced
2 cloves garlic, minced
2 tsp dried oregano
½ tsp sea salt
½ tsp black pepper
2 Tbsp avocado oil
4 cups spring mix or arugula
1/3 cup olives
2 Tbsp feta, crumbled
¼ cup artichoke hearts, chopped
1 cup cherry tomatoes, halved
½ cucumber, sliced
½ cup hummus
¼ cup fresh squeezed lemon, to drizzle
2 Tbsp Soom Premium or Organic Tahini, to drizzle

Directions
Prepare turkey burgers: add all ingredients to a large bowl. Use hands to thoroughly mix all ingredients together. Using your hands, form mixture into 5-6 burger patties and set aside.
Add avocado oil to a non-stick or cast-iron skillet over medium heat. Add turkey burgers and cook 5-6 minutes, or until lightly browned. Flip and cook an additional 5-6 minutes. Add ¼ cup water to pan, reduce heat to low, cover, and cook until turkey burgers have finished cooking (when their internal temperature reaches 165F), roughly another 3-5 minutes.
Prepare bowls by adding spring mix or arugula to two bowls. Add remaining of ingredients. Add turkey burgers and top with a squeeze of lemon and drizzle with additional tablespoon of tahini. Enjoy!
