Green Goddess Hummus

Ingredients
1 (15oz) can of chickpeas, drained and rinsed
Juice of 1 large lemon
2 - 3 cloves of garlic
½ cup fresh parsley
⅓ cup fresh basil
2 scallions, white and light green parts
2 Tbsp dill or tarragon
1-2 tsp champagne vinegar
1 tsp salt + more to taste after blending
1 ice cube (helps make it extra creamy!)
2–4 Tbsp cold water, to thin
1 Tbsp olive oil, for serving
Directions
Soften the chickpeas: Add chickpeas and 1 tsp baking soda to a small saucepan and cover with water. Gently simmer for 10 minutes, then drain and rinse under cold water. Swish them around with your hands to loosen and remove as many skins as possible (this helps make the hummus ultra-smooth).
Blend the base: In a high-powered blender or food processor, blend the peeled chickpeas, tahini, lemon juice, garlic, and salt. Add cold water 1 tablespoon at a time and blend until smooth and creamy.
Add the greens: Add parsley, basil, scallions, dill or tarragon, vinegar, and the ice cube. Blend again until the mixture is vibrant and silky. Taste and adjust seasoning, lemon, or vinegar if needed.
Serve it up: Spoon into a bowl, drizzle with good olive oil, and top with extra herbs or sprinkle of sumac if you’d like. Serve with fresh veggies, pita, or spread it on sandwiches and grain bowls.
