Hummus & Veggie Sandwich

Ingredients
2 slices bread, toasted (we like Silver Hills Bakery!)
2-3 Tbsp hummus (you gotta try it with this Green Goddess Hummus!)
sliced veggies of your choice! (we piled on avocado, carrots, cucumber, tomato, and lettuce)
salt & pepper, to taste
Directions
Pop your bread into the toaster.
Slice, shred, or ribbon your veggies. If using red onion, you can soak the slices in cold water for a few minutes to mellow the bite.
Spread a generous layer of hummus on both slices and layer on your veggies. Add a pinch of salt & pepper if you'd please, then slice and enjoy!
