Ingredients

1⁄4 cup + 3 Tbsp Soom Premium or Organic Tahini
1⁄4 cup peanut butter
1⁄2 cup honey*
1⁄2 cup brown sugar
1 tsp vanilla extract
3 cups of rice cereal*
1⁄2 cup dark chocolate chips
1⁄2 cup butterscotch chips*

1⁄4 cup Soom Chocolate or Dark Chocolate Sea Salt Tahini
Flakey sea salt for topping, optional
Directions
Line an 8x8 baking pan with parchment paper, leaving an overhang of parchment paper to make removal easier. Set aside.
To a heavy bottom pot add 1⁄4 cup tahini, peanut butter, honey, brown sugar, and vanilla extract. Over medium low heat, whisk together until a smooth, thick mixture forms. Remove from heat and immediately fold in rice cereal until fully incorporated.
Transfer the rice cereal mixture to the lined baking pan. Using a spatula, gently press into an even layer. Set aside
To a bowl or small saucepan add the dark chocolate chips, butterscotch chips, and Chocolate or Dark Chocolate Sea Salt Tahini. If using a microwave, heat in 30 second intervals, stirring in between until fully melted. If using a saucepan, heat over low heat, stirring constantly.
Pour the melted chocolate mixture over the rice cereal mixture. Using an offset spatula, spread into an even layer. Drizzle 3 tbsp tahini over the chocolate in horizontal lines. Drag the tip of a knife or a toothpick through the tahini, creating swirls.
Place in the fridge for 60 minutes, or until the top is fully set. Sprinkle with flakey sea salt. Slice, serve, and enjoy!
Store in the fridge for up to five days.
Recipe Note
Gluten-free option: use gluten free brown rice cereal
Vegan option: use maple syrup in place of honey and omit butterscotch chips and replace with additional dark chocolate chips
