Tahini Peach Cobbler

Ingredients
1½ cups all-purpose flour
1½ tsp baking powder
½ tsp cinnamon
½ tsp salt
½ cup salted butter, melted and slightly cooled
½ cup granulated sugar
¼ cup light brown sugar
2 tsp vanilla extract
¼ cup milk of choice
Coarse/raw sugar for topping, optional
Vanilla bean ice cream, for serving
5-6 large peaches, thinly sliced
¼ cup light brown sugar

3 Tbsp Soom Premium Tahini
1 Tbsp lemon juice
¼ tsp cinnamon

Directions
Preheat the oven to 375F. Grease a medium baking dish with butter. Set aside. Begin by making the topping. In a medium bowl, whisk together the flour, baking powder, cinnamon, and salt until combined. Set aside.
In a separate bowl, whisk together the melted butter, both sugars, vanilla, and milk until smooth. Add the dry ingredients to the wet, and mix with a rubber spatula until combined. Set aside.
For the filling, add the peaches to a large bowl. Add the sugar, tahini, lemon juice, cinnamon, and salt and stir to combine. Add peach mixture to the prepared baking dish. Spoon/dollop the topping evenly over the peaches. Sprinkle with a handful of coarse sugar if desired. Bake for 25-30 minutes, or until peaches are bubbly and the topping is golden brown. Let cool for 10 minutes or so, then serve with vanilla bean ice cream.
Recipe Note
This recipe makes extra of the cobbler topping, depending on the size of your peaches and the vessel you’re baking in. If you use a smaller baking dish, you may only use ⅔ of the topping. If you use something larger, like a 9×13 baking dish, you may use all of the topping – just depends on the ratio you like! Any extra topping can be used to make mini individual cobblers or an additional smaller one.
