Roasted Cauliflower Pizza

Ingredients

¼ cup Soom Premium Tahini
1 minced clove of garlic
2 Tbsp fresh lemon juice
2 Tbsp olive oil
1 tsp sumac
Salt
1-3 Tbsp water
1 small head of cauliflower
1 large red onion
2 Tbsp za’atar
1 ball of pizza dough
¾ cup mozzarella cheese

Combine tahini, garlic, lemon juice, oil, sumac, salt, and water to the base of a blender and blend until smooth and creamy.

Preheat the oven to 400F.
Toss the cauliflower florets and sliced red onion with olive oil, salt, and za’atar and add to a rimmed baking sheet. Roast for 25 minutes or until golden brown and tender and remove from the oven. Set aside to cool.
Increase the oven temperature to 475F.
Roll out 1 ball of pizza dough and spread an even layer of tahini sauce (you may have extra leftover). Layer on the roasted veggies followed by the mozzarella cheese. Sprinkle with additional za’atar, if desired. Bake for 12-15 minutes or until the crust is golden brown and crisp.
Remove from the oven and sprinkle with fresh parsley while the pizza is warm.
