Oven Baked Sweet Potato Fries with Green Tahini Dip

Ingredients
2 medium sweet potatoes
½ tsp olive oil
¼ tsp pepper
½ tsp salt

½ cup Soom Premium Tahini
Juice from 1 lemon
½ cup fresh cilantro
¼ cup fresh parsley
¼ cup fresh mint*
1 clove garlic
¼ tsp salt
¼ tsp pepper
¼ cup ice cold water

Directions
Preheat the oven to 425F and line a rimmed baking sheet with parchment paper. Cut both sweet potatoes into 1/4”-1/2” thick fries.
Add sweet potato fries to the sheet and toss with olive oil and pepper until coated. Arrange in an even layer and bake for 15-20 minutes, then flip, and bake for an additional 10 minutes or until golden brown and crispy. While the fries are hot, sprinkle with salt.
While the fries are baking, make the green tahini sauce. Add the Soom Premium Tahini, lemon juice, cilantro, parsley, mint*, garlic, salt, pepper, and ice cold water to the food processor. Blend until smooth and creamy. Add additional ice cold water as needed, until desired consistency is reached. The more water is added, the thinner the sauce will be. For a thicker sauce, add less water.
Serve the sweet potato fries with green tahini sauce for dipping.
Recipe Note
*Feel free to swap mint for 2 tbsp – 4 Tbsp dill or 2 Tbsp chives or add in your favorite herbs for an herbaceous, bright green tahini dip.
