Peach & Halloumi Arugula Salad with Tahini Pesto Dressing

Ingredients
5 cups arugula
3-4 peaches, sliced into 1⁄4 inch wedges
8 oz halloumi cheese, sliced into 1⁄4 blocks
1⁄4 cup red onion, thinly sliced
1⁄2 cup cherry tomatoes, halved
1⁄3 cup olive oil
2 cloves garlic
Juice of 1 lemon

2 Tbsp Soom Premium or Organic Tahini
1⁄4 cup parmesan cheese
1 cup basil
Salt and pepper, to taste
For the salad:
For the Tahini Pesto Dressing
Directions
Add all the Tahini Pesto Dressing ingredients to a blender or food processor. Blend until smooth. Taste for salt and pepper.
In a dry pan, over medium/high heat, fry halloumi slices for 3-4 minutes on each side or until deeply golden brown.
On a large platter, scatter arugula, peaches, tomatoes, red onion, and halloumi. Dollop Tahini Pesto Dressing all over. Serve immediately. Enjoy!
