Tahini Pecan Pie Bars

Ingredients
¾ cup vegan butter, room temperature
⅓ cup sugar
½ teaspoon ground cinnamon

1 tablespoon Soom Premium or Organic Tahini
1⅓ cups all-purpose flour
2 tablespoons plain unsweetened vegan milk
2 tablespoons arrowroot powder
⅓ cup maple syrup
2 teaspoons vanilla extract
½ cup light brown sugar
¼ teaspoon ground nutmeg
¼ teaspoon ground cinnamon
⅓ cup vegan salted butter, melted
2 cups whole raw pecans, chopped

Directions
Preheat oven to 350 degrees. Line an 8 x 8-inch baking pan with parchment paper, and set aside.
For the crust, in bowl of an electric mixer on medium speed, beat butter, sugar, and cinnamon until smooth. Turn to low speed, and add tahini until smooth. Slowly add flour until dough comes together (dough will be a bit sticky).
Transfer mixture to prepared pan, and pat down gently with hands. Place in oven and bake 20 minutes.
For the filling, in a large bowl, whisk together milk and arrowroot powder until smooth. Add maple syrup, vanilla, brown sugar, tahini, nutmeg, and cinnamon. Whisk until combined. Slowly add butter, and continue to whisk. Stir in pecans.
Once crust is done, remove from oven and let cool 10 minutes. Pour filling on top of crust. Place back in oven and bake 35 minutes, or until edges are set (the center will still look soft).
Remove from oven and let cool for at least 40 minutes to allow filling to set. Cut into 16 bars.

- For a caramel sea salt bar, add flaky sea salt on top.
- For an extra decadent treat, drizzle Soom Chocolate Tahini over bars.
