Roasted Cauliflower Pizza

Ingredients
1 minced clove of garlic
2 Tbsp fresh lemon juice
2 Tbsp olive oil
1 tsp sumac
Salt
1-3 Tbsp water
1 small head of cauliflower
1 large red onion
2 Tbsp za’atar
1 ball of pizza dough
¾ cup mozzarella cheese

Sumac Tahini Spread
In a blender, combine tahini, garlic, lemon juice, olive oil, sumac, and a pinch of salt. Blend until smooth, adding 1–3 tablespoons of water gradually to reach a spreadable consistency. Taste and adjust seasoning as needed.
Pizza
Preheat the oven to 400F.
Cut the cauliflower into bite-sized florets and thinly slice the red onion. Toss both with olive oil, salt, and za’atar. Spread on a rimmed baking sheet and roast for 25 minutes, or until golden and tender. Set aside.
Increase the oven temperature to 475F.
Roll out the pizza dough on a floured surface to your desired thickness and transfer to a pizza stone or baking sheet.
Spread a layer of the tahini sauce over the dough (you may not need all of it).
Top with roasted cauliflower and onions, then sprinkle evenly with mozzarella. Add more za’atar if desired.
Bake for 12–15 minutes, or until the crust is golden and cheese is bubbly and slightly browned.
Remove from the oven and sprinkle with fresh parsley while the pizza is warm. Enjoy!
