Chocolate Tahini Date Bites

Ingredients
2 cups medjool dates
1 cup walnut pieces

½ cup Soom Chocolate Sesame Spread
½ cup coconut flakes
Directions
Add the dates to a food processor and blend until a sticky paste forms. Transfer to a large mixing bowl.
Add the walnuts to the food processor and pulse until finely chopped (but not a powder). Add to the bowl with the dates.
Add the coconut flakes and Soom Chocolate Sesame Spread to the bowl. Use a spatula or clean hands to mix everything until fully combined and evenly sticky.
Scoop about 1 tablespoon of the mixture at a time and roll into small balls using your hands.
Scoop a tablespoon of the mixture into your palm; roll into a small ball.
(Optional): Pour additional coconut flakes onto a plate or cutting board and roll each ball to coat.
Place the bites on a wax paper-lined tray or container and refrigerate for at least 20 minutes, or until firm. Store in an airtight container in the fridge for up to 1 week or in the freezer for longer.

I have been making these over and over-but not quite exactly as the recipe. I add cacao, regular Soom tahini-maybe some hemp seeds, a spoonful of almond butter and some other stuff if am in the mood. If I don’t have time to roll the balls right away. I stick the "dough’ into the fridge and roll in white sesame seeds. They seem to keep for a long time, but I’m going to make a smaller batch so they stay a bit softer. I have kept them for a LOT longer than a few days in the fridge.
