Avocado Toast with Sriracha Tahini

Ingredients
1 slice of sourdough or hearty multigrain bread, toasted
1 avocado, mashed
1 tsp lime juice
1 fried, poached, or soft-boiled egg
salt and pepper to taste
Everything But the Bagel Seasoning (optional)
1 Tbsp lemon juice
1 tsp sriracha (more if you like it spicy!)
½ tsp maple syrup (optional, for balance)
Ice water to thin, as needed
Pinch of sea salt

For the Sriracha Tahini Sauce
Directions
In a small bowl, whisk together tahini, lemon juice, sriracha, maple syrup, and sea salt. Add ice water a little at a time until the sauce is smooth and drizzleable.
Cook your egg to your desired preference. While the egg is cooking, toast the slice of bread. While the bread is toasting, mash 1 avocado and add a squeeze of lime lime juice and sprinkle of salt and pepper. Mix to combine.
Spread mashed avocado on top of toasted bread and top with egg. Drizzle with Sriracha Tahini Sauce. Top with other seasonings as desired like everything but the bagel, paprika, nutritional yeast, garlic, or more salt & pepper!
