Maple Coconut Snack Bites

Ingredients
8 pitted Medjool dates
1/2 cup quick oats
1/2 tsp vanilla extract
Small pinch of salt
1 Tbsp maple syrup
3 Tbsp unsweetened coconut flakes
2 tsp sesame seeds
Directions
Soak dates in hot water for 5–10 minutes; drain.
Blend dates and tahini in a food processor until smooth.
Add oats, vanilla, salt, and maple syrup; pulse until combined.
Transfer to a bowl and fold in coconut flakes and sesame seeds.
Roll into 10 small bites.
Chill for 30 minutes before serving.
