Maple Coconut Snack Bites

Ingredients
- 8 pitted Medjool dates 
- 1/2 cup quick oats 
- 1/2 tsp vanilla extract 
- Small pinch of salt 
- 1 Tbsp maple syrup 
- 3 Tbsp unsweetened coconut flakes 
- 2 tsp sesame seeds 
Directions
- Soak dates in hot water for 5–10 minutes; drain. 
- Blend dates and tahini in a food processor until smooth. 
- Add oats, vanilla, salt, and maple syrup; pulse until combined. 
- Transfer to a bowl and fold in coconut flakes and sesame seeds. 
- Roll into 10 small bites. 
- Chill for 30 minutes before serving.
