Cava-Inspired Harissa Tahini Salad

Ingredients
1 head romaine lettuce, chopped
2 cups cooked chicken, diced or shredded
1 cup cooked chickpeas
1 cup cucumber, diced
1 cup cherry tomatoes, halved
½ cup pickled red onions
½ cup crumbled feta
¼ cup chopped parsley
1 cup cooked quinoa or brown rice

Soom Harissa Tahini (drizzle to taste!)
Avocado
Kalamata olives
Crispy pita chips
Roasted Sweet Potatoes
Optional toppings:
Directions
Arrange the romaine in a large serving bowl and top with the quinoa, chicken, chickpeas, cucumber, tomatoes, pickled onions, feta, parsley, and any other additional toppings.
Drizzle generously with the Harissa Tahini and toss to combine.
