Ingredients
For the salad
2 (15 oz) cans chickpeas, drained and rinsed
1 English cucumber, diced
1 cup cherry tomatoes, halved
1 red bell pepper, diced
¼ red onion, thinly sliced
½ cup chopped parsley
¼ cup chopped mint
½ cup crumbled feta

¼ cup Soom Harissa Tahini
½ cup plain Greek yogurt
Juice of 1 lemon
1 Tbsp olive oil
1-2 Tbsp water, as needed
½ teaspoon kosher salt
¼ teaspoon black pepper
For the Harissa Yogurt Dressing
Directions
In a large bowl, combine the chickpeas, cucumber, tomatoes, bell pepper, red onion, parsley, mint, and feta.
In a small bowl, whisk together the Soom Harissa Tahini, Greek yogurt, lemon juice, olive oil, salt, and pepper. Add water a tablespoon at a time until the dressing reaches a pourable consistency.
Pour the dressing over the salad and toss until evenly coated.
Let sit for 10 minutes before serving to allow the flavors to meld.
Serve chilled or at room temperature.
Recipe Note
For an extra quick version, squeeze Soom Harissa Tahini directly over the chickpea salad and skip making the yogurt dressing.
